There’s zero justification for a Mario Kart game costing 80/90 dollars/euros. It’s simply not a game with the kind of investment behind it to justify such a price home. IMO only GTA6 has a somewhat reasonable argument to get away with that. Yes they will make a ton of money but they also spent quite a lot making it.

First, if they already have a PC port your point is moot. They would still need to make a controller version for the Xbox and PS5, but the switch can use both.

Secondly, some games are simply not released on consoles because it simply doesn’t translate well without a mouse, like RTS games, for example.

This is an integral part of the system and obviously games would specifically work with it.
