Honestly, if I were you, I’d install Proxmox VE for the VMs/containers, and Proxmox backup server (possibly as the VMs) for the backups in all the locations. Super easy to configure the backups, and super easy to restore them. All done via a nice enterprise-ready GUI and free of charge

Just join some smaller instance not hosted in the US. That’s what I did, and it prevents centralization. I am super happy with my choice as the bigger instances may be getting defederated while the smaller ones kinda fly under the radar and the chances of getting caught in a collective responsibility for stuff that other users from your instance posted are smaller

Nextcloud is not just a file storage/sharing solution. Nextcloud Talk has no free fully fledged alternatives for instance.
