I’m extremely European so don’t have any prior experience making kimchi, but I feel a lot of recipes I find online are rather westernised.
Kinda looking for someone their grandma’s kimchi recipe.
Where do you live? I think it will be extremely hard to get all the ingredients right… Besides, almost no one actually measure things when making Kimchi so every Kimchi is often wildly different to the others.
But, as a Korean, this seems to be pretty much perfect.
I’m in the Netherlands, so yeah, probably difficult. But, there are a bunch of Asian supermarkets here I could try and find some.

Maangchi.com is a favorite for Korean recipes and she has a variety of kimchi recipes. Very traditional ones and also quick and easy versions.
