I went to the cheese museum in Gouda last year and they explained that according to the current theory our ancestors discovered butter and cheese by hanging pouches of milk on their horses or cattle while traveling. The movement would turn the milk into butter and, if they used pouches made of animal stomach, the bacteria would turn the milk into cheese.
So this is more or less the method by which we discovered butter in the first place.
I was gonna say. The idea of Mongols herding on the planes with a diet that contains a lot of butter suddenly makes a lot more sense. The idea that folks would invent a mode of long-term food storage for free/accident is kind of mind-blowing.
