This looks cheap and filling for the colder months. It was originally a poverty food so I’d just use whatever cheese is cheap or available.
I used to make a variation on this: potato leek pie
shredder attachment works best-shred potatoes & leeks, add to a bowl of cream, thyme, lots of parmesan, S&P, mix well.
small skillet, med-hogh heat, a little oil. strain out the liquid, put the potatoes in the pan and tuck in sides, pat down firm, let cook to brown up and flip. Finish in a hot oven, flip onto a cutting board and let settle for a bit and then slice.
This looks so ridiculously nice!
I can definitely see doing this in the cast iron skillet while camping this winter!
I’ve kinda turned some leftover stamppot into this by frying it and adding some cheese.
I called it bubble & squeak, though Frico sounds fancier 😁
