Frico (Cheesy, Potato and Onion Cake)

Frico, is the ultimate comfort food. Potatoes and onions sauteed until soft then fried with lots of Italian cheese. Soft, crispy and delicious!

This looks cheap and filling for the colder months. It was originally a poverty food so I’d just use whatever cheese is cheap or available.

    I’ve kinda turned some leftover stamppot into this by frying it and adding some cheese.

    I called it bubble & squeak, though Frico sounds fancier 😁
