So, I was told to not use Signal, so all that is left is Matrix. And I am not techy enough to have my own server and neither are my relatives, so Matrix.org is the only option

Did you try SimpleX chat? My friend switched to it, so did I. It’s federated like Matrix but it doesn’t require registration. There’s absolutely no account system at all, Servers don’t know your identity because your username is e2e encrypted
It’s all about threat profile. Unless your relatives are discussing with you or each other organizing a socialist group or something Signal is probably fine if you’re not inclined to self host a matrix.
