Egyptian Koshary

2 eggplant recipes

Foul Mudammas (fava beanis )

Lentils and rice with cauliflower

Syrian Muhammara, spicy dip

3 cheap eggplant recipes

They all have subtitles, and should be quite affordable.

Edit: Moraccan Harira (Lentil and Chickpea Soup) is vegetarian not vegan.

I thought about including a Mujaddara recipe as well, but honestly Koshary is way better peter-running

One Arabic (vegan?) dish I’m fond of is baba ganush (which I thought was Turkish because my favorite places to get them were Turkish restaurants). Usually I despise eggplant, but this dish is amazing.

Sorry to be white af, but my partner and I LOVE food from Western Asia. It was how we both bonded when we started dating. I’ll tear through these for sure.

Just made and ate the foul mudammas with some friends. Very very cozy food, solid 8.5/10. Flavor is mild but it warms the soul. This dish and a warm fire would put me to sleep.
